Blueberry Banana Bread

My mom gave me this wonderful recipe while we were visiting them over Thanksgiving.  I have since made it for my sister-in-law and mother-in-law and plan on making more today for my kid’s Sunday school teachers.  It’s a nice change from plain  banana bread.

2 cups flour- I mixed 1 1/2 cups of white with 1/2 cup of whole wheat

1 tsp salt

1 tsp baking soda

1 cup sugar- I might try and reduce this next time

1 egg, beaten

1/2 cup vegetable oil- I also might try to replace this with applesauce

1 tsp vanilla

2/3 cup mashed bananas- about 2

1 cup blueberries- I used frozen and tossed them in a little flour to keep from sinking to the bottom of the pan

1/2 cup chopped nuts- optional

Preheat oven to 350 degrees.  In a large bowl, combine flour, salt, baking soda and sugar.  In a separate bowl, combine egg, oil and vanilla.   Add wet ingredients to dry ones.  Fold in bananas and blueberries and mix well.  Add nuts and mix.  Pour into a greased load pan and bake 1hour to 1 hour and 15 minutes.  I covered with foil the last 25 minutes because I was using a dark pan.  You may not have to cover with a glass pan.  Insert toothpick to check for doneness.  The toothpick should come out just about clean.  Allow bread to cool before slicing.

Note- batter will be very thick- like oatmeal.
