Sneaky Vegetables

My kids are like most kids and that they don’t like to eat a wide variety of veggies. So I’m getting pretty good at sneaky some into the foods they normally eat. Right now my favorite to add is sauteed onions, garlic, and eggplant. I add it to anything with a tomato based sauce.
To prepare I peel the eggplant and chop it up into small pieces. I only use the pieces without the seeds- I don’t want to get caught! I then chop up the onion and saute it and the eggplant in some garlic and a little oil.
My kids (and husband) have never been able to tell the difference! I feel like my kids are eating a little bit healthier.

I want to apologize for not responding to the question you left me on my blog a few weeks ago. Truth is, I forget to check the comments. You asked me about the scrapbooking templates I have up. I used templates that other people have created to make my layouts. I save them onto my external hard drive as well on photobucket. I print out the ones I want to make into a book. I have heard of some who actually create a bound book from their digiscrapbook layouts, but I just order the prints from Scrapbooks to Share one page at a time. I am currently working on an album to put together for my youngest dd’s grad party in May.
