Slow Cooker Thursdays

My house is starting to smell good this morning! At this very moment, I have a pork roast with potatoes in the crock pot. I got the recipe from $5 Dinners and so far, the recipes I’ve tried from her have been great! Her recipe is below (and make note at the end when she mentions to save the juices for stew and be sure to check out her site for the cost breakdown):

1 Pork Roast
6 White or Red Potatoes, cut in cubes
1/2 onion, chopped
2 cloves garlic, chopped
1 15 oz. can tomatoes or 4 fresh from the garden
1/2 cup Peas
Water or Broth

1. Pour 1 cup water into crock pot. If you have broth, by all means give it some extra flavor! Place cut potatoes, onions, garlic, tomatoes on the bottom. Place roast on top. Cover and cook 6-8 hours, whichever you prefer. Baste roast after a few hours to get some extra flavor on top!
2. Cook peas and serve with roast and potatoes.
3. Save/freeze juices and any extra potatoes/tomatoes for future beef stew!
