Baked Chicken
When a recipe calls for cut up, cooked chicken, I don’t boil mine in water. Instead I bake the chicken in Italian dressing and it turns out really yummy.
I normally buy the frozen chicken breasts in the bag, so I take out how many I need and put them in a glass baking dish. Then I cover them in Italian salad dressing- whatever brand and flavor I have on hand. For two chicken breasts, I’ll use a little more than half the bottle and for 4 I’ll use the whole bottle. Then I bake them uncovered at 400 degrees for 45 minutes or until done. To make this even easier, I do not thaw my chicken before I bake it! When it has cooled, I chop it up and use in whatever recipe I’m making. I have even put the chopped up chicken in a plastic freezer bag in the freezer to use later. It’s even tasty by itself!
