Creamed Spinach

One of the easiest side dishes that I’ve discovered is Creamed Spinach. I usually keep the ingredients on hand so I can make it when I’m stumped for a vegetable to have with dinner.

One square package of frozen chopped spinach- I don’t thaw first

1/2 a package of light cream cheese

one heaping teaspoon of minced garlic (the kind that is kept in the refrigerator)

I put all three ingredients in a large fry pan on low. I turn over the block of frozen spinach often to help it thaw evenly and quickly. Keep stirring the thawed spinach, cream cheese and garlic together. When all spinach is thawed, I turn up the heat to medium and cook until mixture is hot. If the rest of the meal isn’t ready yet, I keep the mixture on low until I’m ready for it. Serve hot.
