Meal Plan Monday - June 9

Oh, the lazy days of summer are beginning and I couldn’t be happier! So I’m a day late in pulling together my menu for this week. One day this week, we’ll make watermelon ice.

Monday 6/9
Homemade Pizza
This is one of my favorites, but not loved by the rest of the family, they’ve grown accustomed to Pizza Hut. I tried a new crust this time and thought it was pretty good. I did let the dough rest before tossing it up to stretch it and shape it to the pan.

Tuesday 6/10
turkey
mashed potatoes
green beans

Wednesday 6/11
Mustard Cranberry Glazed Chicken Walmart didn’t have the cranberry mustard, so I’ll check Kroger this afternoon. I don’t want to make a special trip to Central Market, so this recipe may get modified.
Parmesan Polenta I’ve never made polenta before in my life. We’ll see if the other family members give it a thumbs up.

leftovers or sandwiches

***Update, we made the watermelon ice and I’ve got to tell you, it sounded and looked better than what it actually did. My taste buds were disappointed!

  1. I checked and the brand I had was Hickory Farms (not Pepperidge Farms as I mistakenly posted) but you could probably make your own with honey mustard and some pureed Craisins soaked in hot water. Or just go with plain mustard too (I’ve used that before and it’s great too)
