Healthy Chicken Nuggets

Don’t tell the kids these are healthy!

1 c. flour
1/2 flaxseed meal
1 T. grated parmesan cheese
1/4 t. paprika
1/4 t. pepper
1/2 t. garlic powder
1/2 t. onion powder
1/4 t. salt
3/4 c. sweet potato puree
1 egg (beaten)
1 pound chicken cut into chunks (I use boneless, skinless.)
nonstick cooking spray
1 T. olive oil

Mix together the breadcrumbs, flaxseed meal, cheese, and the remaining dry ingredients and place in a shallow dish.

In a shallow bowl, mix the sweet potato puree and egg and place next to the dish.

Dunk the chicken into the egg mixture and then toss them with the breadcrumbs until they’re completely covered.

Coat a non-stick skillet with cooking spray and once hot (med/high heat), add the oil. Place the nuggets in a single layer in the skillet and don’t let them get too crowded. Cook until crisp on one side and then flip. Golden brown is what you’re aiming for. Dark brown and black are instantly rejected by my kids. It’s always a good idea to cut into a piece before serving to be sure it’s cooked all the way through.
