Fruit Pizza
This is the perfect recipe for this time of year- fresh fruit is at it’s prime!
1 roll of refridgerated sugar cookie dough
8 oz Cream Cheese
1/2 cup sugar
1 tsp vanilla
8 oz Cool Whip
1 medium can pineapple chunks- reserving 1/2 cup of juice
Any other kind of fruit cut up- strawberries, blueberries, Kiwi, etc.
2 Tbsp lemon juice
1 Tbsp corn starch
1/4 cup water
1/3 cup sugar
Preheat oven to 350 degrees. Roll out cookie dough and put in pizza pan that has been sprayed with Pam. Bake 8-10 minutes or until lightly brown. Cool.
Mix cream cheese, 1/2 cup sugar, vanilla together until well blended. Add cool whip and mix. Spread on top of cool cookie crust.
On top of cream cheese mixture, add cut up fruit in a pretty pattern.
To make glaze- mix 1/2 cup pineapple juice, lemon juice, corn starch, water and 1/3 cup sugar in a sauce pan. Cook over medium heat until thick. Let cool and pour over top of fruit pizza. Chill in the refrigerator for a few hours and cut and serve.
This makes a very pretty dish to serve at a shower or party. Enjoy!
