Applesauce Muffins

One of my most favorite recipes is Applesauce muffins. I had a dear friend in Florida that shared it with me. Since then I’ve made them many times and often double the recipe to put some in the freezer.

Ingredients
1 1/2 cups Oatmeal
1 1/4 cups whole wheat flour
3/4 tsp cinnamon
1tsp baking powder
3/4 tsp baking soda
1 1/4 cups unsweetened applesauce
1 cup milk
1/2 cup packed brown sugar
3 Tbsp oil
1 egg
Topping
1/4 cup oatmeal
1 Tbsp packed brown sugar
1/2 tsp melted butter
Mix topping ingredients together.
Preheat oven to 375 degrees. Spray muffin tin with Pam.
Mix oatmeal, flour, cinnamon, baking powder and baking soda. Set aside. Mix applesauce, milk, brown sugar, oil and egg. Add dry ingredients to liquid ones. Mix well. Pour into muffin tin. Sprinkle topping over batter. Bake 20 minutes. Makes 16 muffins.
